Fig Jam

At a family owned grocery store i tasted this fig jam imported from France made from red fig.
With double cream brie also on the cocktail party toast was very good.
So we bought some.

Living in the South I don't think I've ever had fig jam. We always had fig preserves which was the whole fig. I would think the jam would be more manageable than the preserves. When eating preserves on buttered toast it is a juicy affair. One needs to be constantly vigilant for running fig juice which is more like a fig syrup and quite tasty. It can be added to BBQ sauce for a interesting twist. It adds a richness and depth of flavor to the sauce. There is a recipe for strawberry jam that uses chopped/minced figs and strawberry jello. It's OK but I don't think it fools anyone.

I think I'll look for some fig jam and try it.

We get a greek fig jam here and it is very tasty as well. 

Thanks for the picture Martin. I printed it and will take it to the market with me. If my local does not carry it I'll see if they will. It would be nice to try as the only thing they carry around here is fig preserves also. Preserves are fine but I am more of a jelly/jam man.

Is it made from dried figs or fresh?  I'm not a fan of fig jam made from dried figs.  If I can find a fig jam made from fresh figs I'd definitely try to get some.

I love looking at Amazon for 'stuff'. The reviews can be both entertaining and helpful.

 

One of the things I really want to try when I get too many figs (please, please...) is making fig 'preserves'. The plan is to take ripe figs, grind them up in a food processor, dehydrate them much of the way as when making a fruit leather, then heat to sterilize the still wet (but not too wet) fig slurry. Don't know if that will work, but by not having to cook it very long, and not adding any extra sugar, might make a quite good fruity, figgy spread.

I'm not so much into jam or preserves.  JD is diabetic, but when I get too many figs, I'm making pure fig wine!  The brix (sugar content) is high on figs, and if I freeze them, the juice will pour out, and that I will ferment, rack, and bottle!  Can't wait for the day!

JD is a strange creature!  He gets surgery on his shoulder, has pain when he has to  "honey do," but zero pain when fly fishing or golfing!  JD has no problem with wine.  The yeast eats the sugar and spits out alcohol.  To him, wine is like a potato.  No problem.  Looking forward to see what fig wine tastes like!

I hadn't thought of trying to make wine from any extras....  Dad used to make good wine from grapes. I know it's counting my chickens before they're hatched, but it sounds like something to try. :) Or maybe infused flavors like Limoncello.

 

 

 

Maybe figs soaked in brandy would be good too, just like cherries soaked in brandy.

How about dried figs rehydrated in your choice of poison! I'm thinking Bourbon.

We made fig jam last year. It had lemon in it and turned out very good. Got the recipe from an italian cookbook. We also like it paired with Brie. A friend of mine also made fig wine last year and it is okay, but not as good as grape wine.

Oh yes on the dried figs in bourbon. I picked up a bagful of dried figs from one of those unappreciated trees in a back alley (no idea but the cuttings are rooted) gnawed on a few and put the rest up in jars of Jack Evans. It is to share with only the best friends and may not last till Christmas baking season. i also took the onsie twosie figs last year, chopped them and layered them in sugar. When I had a few jars full they were cooked a bit in the juice created and jam was made. Peeled figs in light honey syrup with a vanilla bean and paper thin slices of lemon was mighty fine too.

My choice of poison?  I'm thinking chocolate. ;)

 

So far I've tried 9 different brands of fig jam and fig preserves.  Most from the U.S., but one each from France, Lebanon, Turkey, and Italy.  So far my favorite of the commercially available ones is Gia Russa, from Italy.  Here in the northeast I find it at Tops supermarkets.  Comes in a little square glass jar... pretty good on toast, or in a sandwich with almond butter or cashew butter.

  
I've found a couple that are also figs+walnuts (France) and figs+port wine (California).

For those you you interested in making your own preserves, Bass has some nice recipes on his Trees of Joy site, http://www.treesofjoy.com .  Even a couple of recipes involving rehydrating dried figs in milk, then putting in walnut pieces and roasting.  I tried that... it's easy and tastes great  (the kind of recipe I like :-)

The ones I found on Amazon (Rabitos Royale from Spain... http://www.amazon.com/Rabitos-Chocolate-Dipped-Spain-ounce/dp/B0030QNH6K/ref=sr_1_8?ie=UTF8&qid=1337666084&sr=8-8 ) weren't so good... dry and not so tasty, and the chocolate was kinda waxy.  But those in your photo look great!  Did you make them?  Or... ?

No, I did not make them - I suspect they are professionally made. I found the image via a google search for 'chocolate dipped figs' or close to that.  They do look good however. :)

Martin, what do you think, does it taste more like fresh or dried figs?

For the record...

Last fall, I bought some dried figs (both Smyrna & Mission),

split them into halves, and soaked them both/separately

in rum and brandy...

Did I like the result? No, no, no!

Apart from some crunchy seed feel; all the figgy taste was

completely gone -- and all tasted like 'pure' rum and brandy!
