I tasted my first maltese beauty this morning and it was real tasty but one thing I've noticed that a lot of figs that I see pics of with red interior have amber interiors down here, maybe because of my climate or maybe first figs from a first year tree, I'm not sure. My maltese beauty and maltese falcon both have amber interiors, I even had a col de dame gris with an amber interior then the next one was red, lol.
