Anticipation

Just came across this in a book of Renaissance cooking - Fried Stuffed Figs:

The biggest fattest figs you can find. (brebas!!!)
Chop up some walnuts, almonds, pears and the pulp of some extra figs.
Pound all this in a mortar adding some sugar and spices - perhaps some fennel seed. (Big granite mortars are wonderful and cheap at Asian groceries)
With your finger make a hole in the center of each fig to be fried and fill with the mix.
Dredge the figs in a light batter made of flour, an egg yolk, a little olive oil and white wine or liquor or water to lighten, and an egg white beaten stiff.
Fry them lightly in abundant olive oil and serve after sprinkling with granulated sugar.

So, Ouzo or Retsina?

Sounds Yummy.  I think I'd use Frangelica for the batter.

Or maybe you could wrap them in Bacon before frying . then substitute   sprinkling with granulated sugar and dip them in Chocolate , then sprinkle with powdered sugar..  Mmmm tasty !

The mind runs wild with possibilities. Consider coriander or allspice or mace, a sweet red wine and baking (without the batter). Thanks for the idea.

I came across a commercial product and would love to make some. It really sounds good. You could probably carmelize some onions, and add some fresh figs and seasonings, and let it all reduce.
