Gene, I hope properly matured figs in good conditions will have a good taste. I have plenty of little figs, so hopefully we will both get to taste them. Let us know when you eat a good one.
The varietals section here at f4f describes Black Provence as a French variety, a little smaller than medium sized. It has black to brown skin, red flesh, is tender, very sweet and lucious. It ripens early and bears prolifically. Photos from Encanto show a red to amber interior. I believe this accession is from Richard Watts, the source of my plant, and Gene's also.
