This is my first year/time taking plants out my garage to break dormancy and it seems that my younger 2 year old trees have broken bud and leafed out a lot and all my mature trees are having a harder time bbreaking buds. Is there a reason for this? Does it take longer for mature trees to come out of dormancy?

I would not worry about it. Based on observation some varieties will break bud before others and some will go dormant before others. I have trees that during mild winters would still have leaves way past Christmas. This is not only with fig trees, but I see it occur with different jujube varieties.
