Can I take cuttings from dormant plants now?

Hi- Fig plants have been in garage since November.  If I wanted to try and root some "backup" figs from some of my plants can I take cuttings now and put in spaghum moss or co co? Plants are fully dormant in garage and most are about three feet tall and 1-2+ years old. I would like to encourage multiple branches as well so would cuttings off the top of single main branch accomplish that as well? Don't want to risk damage if this does not make sense- could wait and try air layers in Spring.  Does it matter if some have not fruited yet? thoughts?  thanks!

It does make sense. It is OK at this time to take one or two cuttings from top of each dormant plant and use either of the two rooting medium Spaghum moss or coco coir. You will lose nothing and may have duplicates in spring to grow in the coming summer. If for some reason any does not give a plant from cuttings you may have early opportunity to air-layer.
It does not matter if the mother plant has rooted or not. I don't expect any damage with taking cuttings this late in the winter.

I root fresh green cuttings all the time and have good results. I do cut off the tip. I have found that many times that tip dies off anyway. I've had success both ways, but this is what Ive been doing recently.
