Can sun and heat radically change flavor in just a few hours?

Okay, so I've been  babying my petite negri!  Only 10 figs total on the tree so I'm seriously guarding against birds and squirrels.  I'm in zone 8a, Texas.  I had two figs beginning to ripen at the same time - same sun exposure, all conditions the same.  This time of year we usually have really sunny, hot weather (99-100 degrees or hotter); however, the last two days were mostly cloudy and rainy and quite a bit cooler.  This morning, normal weather returned and it was quite sunny and hot.  But yesterday around dusk (while still cloudy and rainy) a renegade squirrel was trying to relieve me of  one of those figs, and I dashed to stop him just as the fig fell to the ground.  Didn't mind a little squirrel spit, so I tasted that one yesterday right after it fell - and it was very bland and unimpressive.  I wouldn't even try to do figs if I thought they'd all taste that way. As a matter of fact, while I was waiting for mine to ripen, I bought some figs at a farmers market and they were so blah I just threw them away!!! But this afternoon, after our normal weather had returned and after about five hours of good hot sunshine, I picked and tasted the other fig which escaped the squirrel and it was INCREDIBLE.  VERY SWEET!!! 

Was it just the natural difference between two separate figs, or could five hours of hot sun really make that much difference in taste. 


I will say this- A fig can change taste just being able to ripen a little longer. Plus both figs may have been at different times of ripening even by looking the same.

Last year I had St Anthony's. 2 figs right about  the same time. I tasted one and it was good but I thought a little longer ripening would make it even better.

It was the worst fig I ever tasted. Took one bite and out it went.

1)  Petite Negri does seem to be very sensitive to weather, but not *that* sensitive on a day to day basis.

2)  You're getting your main crop waaaaay earlier than me!  I've got at least two-four more weeks to go.
