Crazy growth spurt - should I prune?

Last winter I wrapped up my figs thinking it would be a cold winter, but it was mild and my little fig trees/bushes died. I pruned them back a lot and they started coming back. This summer we had some hot spells and they totally took off. They are mostly bushes with 3 to 5 "trunks".  My brown turkey has a ton of fruit on it, but I'm wondering if I need to cut it back so the fruit can mature.  It is much fuller and taller now. 

This photo is from above so you can see how many "Trunks" there are. I feel that it's growing out of control!
My Desert King and Peter's are the same.

any suggestions would be greatly appreciated!!!

If you had a use for more plants you might give air layering a try.

It depends if you want a tree or bushy type. I think they look great and wonderful.

When they are young like that, you can leave all the stems as they don't shade each other.
Except for propagation, I wouldn't cut anything on that tree. Or perhaps, if you already have a precise idea of the shape you want, then yes, stick to your plan.
With no particular plan, I would let them all grow for this year.
Winter may take its toll, and you'll be using what is left to you for next year.
If you want the caliper of some stems to thicken more (more cold hardy then), then yes, remove asap all the buds and stems that you don't want, as those are then just a waste of time and energy.
I would then  use pinching on the stems that you leave to grow, as those higher ones, they start to be too high for a good winter protection.
The tree is yours, and so is the decision ... of course :) .

Thanks for your input everyone. I think that for now I'll just pinch back and let them do their thing.
