Dalmatie ripening early with a little help

Sweet figs. Do you still expect to continue ripening figs with the colder weather looming? Will a fig stop the ripening process when colder weather arrives? Just curious as I have about 40 figs which could swell any day now.

Luzzu, yes for me figs can be too sweet.  So far the only fig that is too sweet for me is the Dalmatie IA.  I can't eat a whole fig since it is so sweet and juicy so I share half with my wife or eat something else with it like walnuts or hazelnuts.  On the other hand my Ciccio Nero is sweet but I can eat a bowl of them maybe because it has a nice seed crunch and not as juicy.  It depends on the fig.  I attached some photos from the other day.  The Dalmatie is now ripening nicely, a little smaller but juicier and sweeter.

Psilva8, that is a great question and you will get many opinions on this forum.  Maye you should do a new topic on that subject.   Some people believe figs can't ripen unless it is very hot.  My experience is that figs do continue to ripen but much more slowly, they don't reach the colour depth and sweetness that they do when it is hot.  But my in ground figs continue to ripen until after the hard frost so I get figs until the end of Oct most years.

Hey Pino, I know this is old so sorry for posting, but I have my Stella now ripening for the past few weeks, I had two swell and droop so I covered them all with the little bags and tied the draw strings around the branches and squirrels ripped off the two leaving them hanging from the branch, unfortunately the squirrel did it way to soon and they were very dry and not very sweet. right now I have two more getting quite large so to addition of the bags I also put bird netting. now how soon do you usually take them after they start swelling? its easy to tell with a dark fig but this is a new ball game for me.

If I may share my advice, it's best to wait until they feel soft like a marshmallow and droop as if they're barely hanging on.  The longer you wait, the better it tastes.  With your squirrel issue, I don't know if you want to risk waiting that long.  ;)  Good luck!

thanks frank! the one is completely hanging towards the ground need in anyway holding itself up and is spongy. I even come to the point to make an agreement with them let them take some of my other varieties I just need to try at least one of these they look amazing lol.

The fig in the 2nd last photo post#1 dripped honey for days but was still hard so I left it.  Next day only the stem and big byte marks were left.

thanks Pino, mine are getting soft and are turning yellow but they aren't dripping honey yet, so I figured a few more days. last night I was using the staple gun at 10:30pm to staple the bird netting securely around the pot, while leaving the figs double bagged with organza bags. I wont let the thieving squirrel win this one LOL
