I found this out when I experimented with different ripeness with my unknown LSU Purple too. Picked too early and they are dry and tasteless. Left too long on the tree and they sour, mold, or dry up into tasteless chalk.

The ones that ripen perfectly for me has a red wine aftertaste from the skin. It was moist, sweet and figgy, but not to the level of a Celeste. The tree was put in ground this year and has an inch of wood caliper.

It could be the lighting but from the picture of the cut fig it looks under-moist and not as ripe as it could be?

Others with known LSU Purple fig of approximate age/ condition may have a better answer.

I'm not an expert by all means,so take this with a grain of salt. I feel not enough water or nitrogen in the beginning of the season and the nodes did not get enough space between them therefore all the figs are to close together at the end of the branch , they look very nice that way but they don't seem to develop correctly, sometime this seems to happen if they are root bound. Again I'm not an expert and I would like to here from someone that disagrees with this theory and why
