Fig Balsamic Dressing

While in Whole Foods #134 in El Segundo, CA today in search of an uncooked and mostly unprocessed lunch, I came across a Fig Balsamic Dressing; it was tasty. The balsamic dominates the fig but it is still a good dressing. At home, we use an Italian fig vinegar that is extraordinary (I am blanking on the name) but we get it from a local farmer at the Farmer's Market. I also pour on vanilla ice cream. It is that good!

Sounds great JD.  I bought a bottle of the same, different brand, at my local TJ Maxx, for a whopping $3.99/12 oz bottle.  Needless to say it is all gone.  I have stopped by every other week checking for more, but none.   It way delicious on my spring salad with feta, and heated up until syrup-like and drizzled over vanilla ice cream with a few walnuts.

The cooking shows are always showing the reduction of a balsamic vinegar over strawberries so I tried it once.  I prefer just sugar on it with those little sponge cakes.  I probably need to buy an expensive balsamic vinegar to try it again. 

I got a bottle of that last year, but it barely has any fig flavor.
