If the trees are damaged, ie, mice or some other varmint chewed all the green buds/tips can they recover?  I'll know in the spring for sure, but I'm going to be rearranging where I store them in the future...

If the varmints chewed the buds you're fine. What you need to worry about is them "ringing" the plant. This is when they chew through the live layers of bark all the way around the tree. You would still probably get growth still from the plant below the damage as the energy is stored in the roots this time of year. But you will loose the part of the plant above the damage -- but again this does have to be completely around the plant. If the critters just chew the branch ends all they're doing is pruning, but I would clean up the damage with a sharp pair of shears. There are a lot of threads on here about protecting trees during storage.

What it seems is they chewed on anything green. Outside shed, usually I keep them garaged.
My only other concern is temperature. Outside hit in the teens this year, past couple of winters
were really mild. Should be interesting to see how they turn out...
