Fig desserts at work

Just thought I'd share a couple of pictures of the desserts I made at work last night.

Fig tarts and chocolate covered figs!  Both were a big hit!

I had Brown Turkey to use - what can I say, it comes from the supplier.  I must admit I did eat a few - mine have been done for a month, so  a brown turkey fig is better then no fig ;)  They were very figgy, most weren't that ripe (I ate some that were!)  but, when you put it with some pastry cream, a tart shell and some apricot glaze, they sweeten up just fine.  The chocolate covered ones were pretty good also!

Wow who cares for strawberries as long you have figs. Thanks for the wonderful idea.

Your welcome - I did get the idea from another member in a post about 2 months ago.  I didn't have the heart to do it to mine since it is the first year with the tree and I had only 21 figs on it.  Maybe next year!

21 figs is pretty good!  The dessert looks great as well.

I bet they were a big hit. I needed to check my sugar level just looking at those tarts. Mmmmm.

They look proffessionally made! Niced job!! I keep thinking I'll try something like this, but when my figs ripen they usually just get eaten as is. 

Wow!  Drooling over my keyboard........... Sigh

JoAnn749 those look well. In past an Italian friend's sister did similar with sliver of almond in middle of fig. The baggie he gave me with them lasted but a few minutes.

@BLB - They are!!  I am a pastry chef, I have been asking for fresh figs for a long time - started last summer!  Finally someone took me seriously and ordered them.  I hope to make it a standard for the season.  My figs were eaten as is - don't have the patience to do this at home lol!

@Martin - If I had the time needed, the garnishing would be much nicer.  Unfortunately something has to go - rather have the quantity at this point then the quality.  We'll get there.

I had been making fresh apricot tarts on this menu - they weren't as well received.  I guess we had just the right guests for the figs.
