I have a few fig trees that I've managed to lost the labels to. The squirrels have become quite adept at chewing them off and taking them away.
I've attached some images. Unfortunately I wasn't able to get a pic of the whole ripe fig with the eye and sliced in half. I picked it and put it down on the kitchen counter, and by the time I came back 3/4 was gone.
So I've only ever purchased a few varieties, and of them, I'm not sure which would have a pinkish amber flesh. The ripe fig is yellow or yellow/green with a closed eye. The eye on the ripe one was pinkish.
The varieties that I've purchased are: Atreano, Adriatic, White Genoa, Desert King, Kadota.
I'm pretty sure it isn't Kadota, as I have those labeled. It looks similar to another Desert King I have that is also starting to ripen fruit, but I've seen online that Desert King's flesh is pink or red, not amber.
I also may have picked it early, although the skin was extremely soft and it was drooping, so that may have not allowed it to change color completely inside. The picture of the hanging fruit is starting to ripen up. I'll leave it extra and upload pics when I get a chance.
