Anyone know how long does it last in the refrigerator if freshly made?

When I make fig jam or preserves, there is usually some left over when the jars are filled that I just refrigerate. I usually eat it before it sticks around too long, but in the fridge they last more than a month. I've really never had any go bad.

Hi, I have tried many fig jams, I saw those listed on amazon, there is one by Mitica (spanish pajarero figs) that has almost no sugar added, just some honey, the amazon price is wildly overpriced, it costs about 6.99 for a 7 oz jar in a store, but if you can find a store that sells it they can contact the distributor for a gigantic jar that will last all winter, trust me it is worth it, this is the best one I have ever tried, people come to my home and cry with joy when they try it, the distributor is forevercheese.com but don't even think of ordering direct from them, they don't sell to the public, I tried, trust me.  Just get your hands on one small jar to try, and you will see what I mean.  Good luck!

any updates?

So far this season I have made 15(1 pint) jars of fig jam according to the recipe posted earlier in this thread...I picked about 50 more figs yesterday and am about to start my next batch as soon as I step away from this computer keyboard(Thur. 9/26/13,  7:15am).

I made about 35 jars this year, mainly from the large celeste tree I have that did well this year. I managed to make one jar from  the fruit of a black portugal one to see what the taste difference will be. I also did one batch using the Weck jars, mainly because I think they look nice and would make nice gifts.

Looking good Jack...have you tried the Black Portugal fig jam yet?...how did it taste?

No, I am letting it "age".  the fruit has a far different taste profile so am curious....

I made some with colisanti dark so far and I used galgoni's recipe.  The problem I had was when I used the sugar it was too sweet but the figs themselves weren't very sweet.  I made another batch and I put 3/4 the amount of sugar an it was just about perfect.  The jam almost tastes like strawberry jam it was great.

How did you like the Weck jars? I picked up a dozen this early summer but never got around to putting anything in them. I was all excited about how they look, plus they are BPA free. I saw this fall Ball came out with regular BPA free lids, which is good because those Weck jars are a little pricey. Gifts for special people you really like, actually for me you have to be on this list to get jam in the first place.  :)
