Fig Jam made from Bass' recipes

This morning I made some fig jam using two of Bass' recipes:

Aida's fresh fig jam   -  http://www.treesofjoy.com/content/fig-recipes

I had been in San Diego and brought back about 6lbs of figs in my luggage. In the picture, they are at left, as well as the reddish colored jam

Also I made Sun dried fig jam  - http://www.treesofjoy.com/content/sun-dried-fig-jam

I had some dried Calimyrna figs from Costco. The brown jam was made from these.  Since my parents' fresh figs were so juicy, I used their juice instead of water called for in the sun dried fig jam recipe.

So far so good!

Paul,

good job, did you end up using mastic? how did it taste?

Hi Bass,
Yes I did use the mastic...it has a lemon-like flavor. According to my wife maybe I used a tiny pinch too much. However, to me it tastes pretty good!

man oh man...only thing missing is a hot biscuit and a piece of bacon. i know bacon bad for you...but with fig jam..the bacon is nice.

Or with peanut butter on toast.

After finishing up some store bought fig jam, I'm going to make the dried fig and walnut preserves.  Went to the linked recipe and one of the ingredients is the above referenced Mastic.  But beside it says gum arabic.  Gum arabic, among other things is a binder used in my watercolor paint.  I have a bottle of Winsor & Newton gum arabic that I use to get more gloss and transparency in the watercolors if I need it.  Is that the same stuff as Mastic?

Caneyscud, I believe that they are different

The Gum Arabic you refer to comes from an acacia tree, while the "mastic" (sometimes called Arabic Gum) comes from a pistacia tree.

Paul is correct, don't use the mastic used in paint lol.

You can substitute Mastic with anise seeds, it tastes really good as well.
Paul you mentioned that your jam with tangy, I hope you didn't put too much lemon juice.

Thanks, that's what I thought.  However the Gum Arabic, is quite edible also and used in lots different candies and such.

Good to know to both Gum Arabics are edible

For Mastic however, not all are edible!
