After seeing some of the fig pizzas displayed on the forums over the past few years, I knew I had to try one. In the recipe book "Fig Heaven" that my son and new bride gave me this summer, there was a recipe for "grilled fresh fig, olive, and caramelized onion flatbread" with a pizza variant. So today I made it! Over the pizza dough goes a layer of caramelized onions mixed with fresh chopped oregano, then sprinkled with chopped Kalamata olives, then covered with a layer of thin sliced mozzarella (and I added fresh shredded Asiago on top of that). Over it all goes the sliced fresh figs (and I added fresh mushrooms).
This was the best pizza I ever had. My wife agreed, though she picked off the mushrooms and said she preferred it without them as she thought they overwhelmed the fig flavors. I didn't think so, but it was good either way. I used about 15 or so fresh figs of various sorts - Mt Etnas, Nero 600m, Chiappetta, Atreano, LSU Tiger, and another one or two that I can't recall. Wish I had enough to share with you all!
