I thought I'd do a little light study on fig pollination after reading Ripley's Believe It Or Not entry for today.  Sure enough, the fig owes its diversity to several species of wasps who do the pollinating for the species.
Some of  the species pollinate and leave the fig, and some die inside the fig.  A Wikipedia search for Fig Wasps will reveal all. It does point out that the commercial fig has found a way to bypass all this.  
So that's the crunchy bits in the fig, huh?

Those crunchy bits inside of figs are just seeds.  If you want more information on fig pollination, just search this forum.  You will be amazed.

Empty seeds, if they are pollinated they will have white meat inside them and taste different. There are some mulberry fruits with empty unpollinated seeds too.

May I ask you to show us your very professional pictures of the cut-aways of fig  fresh seeds..

- empty (non-pollinated) .. just air inside  and,

- full with tasty  kernel, giving the fig the unmatched crunchy flavors.

btw.. did you manage to locate the Caprifig ?

I am afraid I couldn't find any caprifigs, but I have found many people that grow figs in the area and thay are common figs. I also found a water stream coming from the ground.

Don't you think hat if figs had roten meat inside ... they would stink ... Just my 2 cents ...
I'm in Zone7, and my figs are crunchy too ... some more than others. Ice crystal is particularly crunchy, for whatever the reason ...

very sad indeed!
A borehole specialist could probably give you an idea.. unless you need a lot of water.

The common fig has been propagated by people for thousands of years, nothing to do with commercialization. A good reference for figs is at the following link.

What's something weird is that the commercial users don't have to tell them that, the wasp literally dissolves in the fig with the figs enzyme
