I was reading it and got a question.
Why for figs this is significant?

As you plant the tree and backfill around it,keep the mix at least 2 inches below the top of the container. The point where the tree trunk meets the root ball should be level with the soil.

so the soil doesn't wash out when you water it? that's the only reaosn i can think of. i water with my water hose off the side of my house. if the soil is high near the rim of the pot, good amount of it will wash out. i learned that the hard way. now i always leave room on the top the collect water so it doesn't wash out the soil.

It's their way of telling you to plant it at the same depth as it came from the nursery.  This is common with most plants, although, with figs, you should be able to plant them deeper, since I believe they will form additional roots anywhere on the trunk, which isn't true of all plants.  For avoiding rot, best to keep at the same depth.
