Figs for making MARMALADE/JAM

Hi the summer has just ended and pretty much most of the figs i gathered i send them to a local factory to make jam. As a matter of fact i was very surprised with the results.

Yet, this year i am thinking of planting some more specific fig varieties for marmalade. What is your opinion? Which varieties are the best for this use? Most of my trees produce the so called "whiteflesh" variety - dont know exact translation from greek "leukosarka". But they are small and my trees dont produce great quantities...

Any other optimal varieties?

I tried Desert King jam recently & it was very good. Got it from this kind Sr. Italian couple who had at least 200 trees but has no clue to most varieties. He was growing figs since 1958 on his 12 acres. He gave me a couple of bags of frozen ripe figs to make jam.
