Fresh ripe figs+Proscuitto+win!

I had a big haul of figs today since the weather has been nice and hot the last few days. I had twice as many figs as in the picture, but I ate them up through out the day. Then i remmebered that I have all this homemade Proscuitto sitting in my fridge and I sliced it up and my wife and I went to town... usually the figs don't last long enough for me to even think about breaking out the Proscuitto.

Sounds great but I don't see  a photo - could you try again?  Or is it just me?

Some nice soft cheese and wine would go great with this!  I guess the question is should that wine be a dry white or something a little sweeter?

I probably should pass some around Martin. I made two legs this past winter. That is way more then I eat in a year.

Looks great!  How do you make it?  How do you slice it?  I've seen home meat slicers but the one's I've seen don't work that well and would take an hour just to slice what's on that plate.

Its basially a whole leg you trim it up, rub it down with salt and let it sit covered in salt for a month then wash off the salt, pepper it and hang it for six months. There are a few minor steps in there but that's basically it. I picked up an older commercial slicer that works great. I slice up all kinds of stuff with it.

I had some of these at Bill's Fig Festival this past weekend. I believe he had other ingredients included, cheese and maybe a piece of tomato. Delicious!
