I realize you can't dry figs on the tree in the 80 - 90 percent humidity that we routinely have most of the summer but are there really good varieties that you could grow to ripeness and then pick and dehydrate ending up with a product that can run with what nature produces in dry climates?
From My experience Celeste ,Malta Black,Tacoma Violett,and other small,eye figs that will no sour easy.Also the fruits have to be medium to small in size ,so that they will dry easier.Large or extra large figs ,are the most difficult to dry.
