I prefer dark to light, smooth over crunchy, size does not matter if taste is there (but the tree does need to produce enough total large or small), skin enough to hold it together (tougher on figs for preserves less for fresh eating or jam). First and foremost flavor sweet and rich with little resin aftertaste.
I'm a couple years out from putting them in the ground but in the 30' foot run I can put three trees in 10' apart and let them grow large or select smaller varieties and go for 5' apart for a fig hedge. The mission may not fit in that planting scheme.
