Older trees set their fruit earlier than small, young trees, so there is abtter chance of ripening them.
On seedlings the fruit make take 10 years or more to reach maturity, and may look completely different when older.
On some, flavor improves, or it may be a difference in weather soil, etc.
Moving from pot to in-ground changes things, as well.
Cold tolerance in many different plants improves with age.
Some figs are awesome from fig 1, and others do need time to mature. They can get better. Don't think I have any that have gotten worse with age.
