Is this tree too old to top? (pic)

Hi, this is a Celeste. I bought it last fall and so I think the base is three years old. I already knocked it down some in July, but I need to move this tree to another place where bushiness will be valued, so I was planning to top it right above the second leaf burst from the bottom. 

Can I do that without messing up the tree? I bought another Celeste in case it's better to just start with a new one. I've never done this before, I'm kind of new to fruit tree growing and pruning especially. Also, I have never seen a fig tree put out leaves like mine is... they have no order to them whatsoever, just tons of them growing into and on top of each other- a leaf explosion almost. I'm not really fertilizing it, though I used a little grow power earlier this season. What's going on there?

You won't hurt the tree when you chop it off.  Just do it during dormancy.  I cut mine back in late winter before they break dormancy.  Jon cuts most of his back to 16" every year.

Ok great. I think I had been misinformed that once the wood turns white, it's best not to prune it.
