Dale, she used Manchego Cheese, but any good aged cheese will suffice. Can't beat that seet and savory combination.
Charles, my wife was thinking of producing gourmet fig products for sell but that's pie in the sky. so to speak. We are currently in the process of making a batch of fig preserves using ginger an lemon to give it that special bite. We are also making fig leather and experimenting with various spices, including cinnamon, anise, chiles etc.
