In Bologna, Italy, Trattoria Battibecco serves this fig sorbet that comprises only figs, sugar, water, and maybe lemon.
I don't have their recipe, but if I had to guess...
750 grams fresh figs, stemmed
100 grams sugar
60 ml water
20 ml lemon juice
Basically, combine the sugar and the water in a large pot, followed by the figs and set over medium-low heat until the sugar dissolves. Allow the mixture to cool. Place the mixture in a blender with the lemon juice and pulverize. Sieve it to remove any huge pieces of skin and seed and then churn according to the directions for whatever machinery you're using.

When I went, they used this smyrna type that's all over Bologna. Everyone referred to them as "the green kind" and they're huge, plump, and bright green with a pinkish-amber interior. They taste earthy, grassy, and only barely sweet. I have no idea what their varietal name is but it's the one pictured on the bottom right.
