Thinking of your Celeste trials, I have a Celeste (Unknown Foxcroft from the Foxcroft subdivision) that is productive, does not drop its figs (here in 8B), and produces tasty figs. However, I have little to no information about its tolerance to rain and its ability to hold the figs until they are 'dead ripe' because the birds and I cannot wait that long.
If Meridian and Foxcroft are 2A and 2B, then the Jackson-Carver Celeste named after Ms. Jackson who lives on Carver street is my favorite. She keeps her gate locked and I cannot get to the main trunk to get the figs that the birds are enjoying. Thus I have only had figs hanging over her fence since I took the attached photo in 2010.

I think that these darker because they started to wrinkle, dry on the tree, and the sugar began to concentrate. They were so good. I made a cheap version of Frank's Lunch of grilled figs with cheese (multi-grain bread and Fontina). Thanks for the idea Frank.
