My wife found some fresj black figs at world market. They looked kind of like Black Mission. About half were not quite ripe and a few were either way under ripe or starting to turn bad. But the ones that perfectly ripe were very tasty. 4 or 5 went to the trash and the rest got turned into a jar of Jam.I cut them up into small pieces (about 1.5 pounds worth), added 1/4 cup water and 3/4 cups of cane sugar. Cooked it to a boil and until it seemed soft and thick. Put a 1/4 tsp of lemon juice in the jar and did the hot water bath for about 10 minutes. I know that's not long enough for long-term storage, but it's not going to last more than a week anyway.. lol

Ahh, rustic bread toasted with fig jam, scrambled egg, cup of java, and a sippy cup of juice. Great way to start the day!
At a "Hunting Camp",Near Mobile, Ala. The cook would make /mix ripe figs, butter and honey. Then, we ate with hot biscuits.Fifty years ago , but I still remember that taste, that experience. Fredfig
