My first fig ever.. almost ripe

ate two figs today.
1 lattarulla,
1 grimoBT, (?)
two on a plate, the ribbon is two inches wide, the grid is one inch by one inch.
ate the lattarulla first. rinsed my mouth out first, put half into my mouth, tasted it, hmmm and thought what is that taste.... realized that it tasted like a fig. sweet, fresh.

the dark one had more flavour, more depth, but so tiny. I think I need a whole plate full to tell more.

That looks a lot more like a Celeste to me, than a BT - which would be a good thing in my book. Make sure to let it get fully ripe.

Ya, i'm hooked.
looking at the other celestes ripening.
and some red and green unknowns that seem to be waiting for christmas.

As for ripeness? how to tell for sure from the outside? somewhere I read the process takes about 7 days, from start of expansion through colour change and drooping.
both had been doing so for a bit more than a week. Does the ripening process take longer in the more northern zones? Should it "fall" off the tree into your hand like a ripe raspberry with little more than a touch?
Internally, from looking at the halved fig, should the colour have gone out towards the skin more?
the lattarulla was a wet jam consistency through and through, tastey skin and all.
Probably should have rinsed my mouth out between the two figs to get a true taste of the celeste.
Are figs like other fruit,that if picked early, have a unripe taste? and if picked too late have a flatter taste than a peak ripe fruit. apples for example, picked green are tangy, picked ripe may still have the tang but also sweetness and flavour, picked past prime the flavour and sweetness flatten out?
