Hello Jennifer, I can shed some light on these. I visited Dalton this past Spring and we talked about Shar Isreal. This fig is one that is hard to find and Dalton no longer carries it because he lost his source. He said, won't have any of these fig until he can find another source.
As for Shar Italian, it is the exact same as Sal's Corleone. I have them both growing in my orchard. Shar Italian is a large round shaped fig with an open eye. Too much water and this fig will split. However, if picked early in the AM, the figs will not spoil but as soon as the sun comes up and temperatures rise....they will spoil. Hope this helps.....
