Funny to see you eat peaches when mine are still pea sized. Here the earlier peaches are ripe by the 15th of July and some do ripen in October.
Funny to hear you say that your main problem is chill hours when mine is those damn last freezes that cull down the flowers and tiny fruits. Even killing them all.
I see that your peach tree seems trouble free. Here they get lots of fungal diseases/problems. I have 3 with no fruits for the second year in a row ... That does not bode well for them.
As for the birds, since you have created a honey pot ... There is no solution .
You probably should keep your trees smaller with less fruits. You should only leave twice the fruits that you're planning to use.
Leaving fruits not fetched will always draw lots of critters. The problem then they eventually no longer feed elsewhere but in your yard... Leaving no fruit for you.
But ok, that's a personal choice. I myself can allow them some fruits, but I won't let crops stay in the garden to attract them and feed them.
