OT Black olives for curing

Just placed my order should be here friday.. How many days does the whole process take can I have them done for christmas??

Hi Al,
I am not sure if they'll be ready by Christmas.
Best way to have it go quickest is to put them in the salt right away (if they arrive Friday, don't wait until Saturday to put them in the salt), and mix them more often. That will speed it up as much as possible.

I just got the olives that I ordered;they are the biggest looking olives that I have ever seen.
Can't wait to get started. (it will be my first time curing black olives, can't wait to get the green
ones)

I'm getting mine today; woo-hoo!
I'm well prepared; a band new pillow-case and a bag of Morton Solar Salt.
This should be fun... though I wish that shipping did not cost almost same as the merchandise.

Mine should be here today too!! I got the salt, I went out and found burlap bags. I thought about pillow cases too, but I figured I found the burlap.... Let me know how that works. The shipping does hurt, but at the few places I have found them in the store. It's the same farm and they build the same shipping price in the cost and then some. Online has been cheaper and easier.

I put mine in last week, our grocery store got about 10 cases in so after seeing this thread I am trying it out, I am using a seagrass basket with cheese cloth, I used salt and layers the same so I guess I will know in a couple weeks if i did it right or not.

Looking for updates Mine are almost done started them mid dec. started in pillow case but it ripped and fell apart so I ended up in 5 gal bucket with holes drilled in bottom placed into another 5 gal bucket to catch juice.. The large ones will be done wendesday the colossal will need a few more weeks they are just starting to shrivel.. tasted a few about a 50/50 mix of done vs still a little bitter. so we let them go another week..

how is everyone else making out....

Mine are in burlap bags, above two nested containers [top container has holes, allowing the liquid to drain away from the olives and collect in the lower container]

Yesterday I sifted them out to see the progress. They're not ready yet.....in part because I was out of town for two weeks at Christmas and wasn't able to shake the burlap sacks [shaking redistributes the rock salt and olive mix, this seems to help them cure faster].  I tried a few of the more shriveled ones and they tasted pretty good.


My colossal ones will likely need another month or so, they have just started to shrivel as well, the juice has barley moved out of them.
