OT: so.. what exactly is easter dinner?

i know thanksgiving dinner is turkey with all the fixings. christmas can be turkey or ham or what not.. not too different from the thanksgiving dinner other than the gifts and the tree.

what exactly is easter dinner? by the way, we have ton of canadian geese waddling around the area. maybe i should go strangle one.

it's whatever you want it to be.  When I was working double shifts (yes, even on Easter), it could be anything from a baloney sandwich to leftovers from what ever we had the day before.

hey dave, i had rice and egg tonight. too many things going on and not being a christian, didn't do much prep. probably bratwurst, mashed tater and weinkraut tomorrow night.

We typically have ham, asparagus, a bunch of high calorie other stuff with dinner as well as before and after.

"bratwurst, mashed tater and weinkraut tomorrow night."

Sounds good to me bro.   It's gonna be ham, greenbeans, yams, and whatever else comes to mind here.  No baloney sandwiches any more.  Been retired for over six years now, and loving it.

I think ham is pretty standard Easter dinner.

as a side, my fav is the baked sweet potatoes (yams)with fresh Cranberries and brown sugar, topped with marshmallows with a touch or Nutmeg and Cinnamon.   goes with Turkey as well as Ham.

Wed always have roast pork and potatoes for easter growing up. But bratwurst sounds good too

This year for us, the main dish is going to be a baked big junk of shank-cut-ham.
I love it and (unlike turkey), left overs tend to taste better.
Going along with it will be some lasagna (I already made some ricotta-like cheese),
and some other good/sweet stuff, plus Easter baskets for the little ones...

Roasted herb and red wine marinated leg of lamb
Garlic roasted small potatoes
Green salad with mango
Steamed green beans sautéed with pancetta
Sautéed cremini mushrooms

we always have stuffed leg of lamb,a pasta dish, stuffed artichokes, and a lot of side dishes. For desert, ricotta pie- wheat pie -cassata cake, cannoli.
But this year we are having guests that do not eat lamb, so we are having ham. :(
Happy Easter to all.

We usually have turkey and spiral cut ham and other fixings like salad, stuffing, yellow rice and gyro style cut beef.

We also make "Pacha".
It is made of beef tripe. Mom sews the tripe into ball shape about the size of a baseball to soft ball and stuffs it with spiced rice and small beef chunks and sews it.
Puts it in a big pot and cooks it like soup like. She adds beef neck bones, sheep tongue onions and chick peas and more spices.

Rafed.
I love tripe and I would love the recipe for Pacha.

In-laws in Michigan own Honey Baked Ham. I think they were the originators of the spiral sliced ham thing.

Dearborn Sausage ham tastes better IMHO.

rafed,

pacha sounds awesome.

Growing up Italian and in New Jersey, it usually was lamb along with lasagna, all beginning with an antipasto. Plus lots of festive desserts.  Nowadays, living in the South, its a ham.

Hey
We are doing the baked ham with a warm rum raisin sauce, potato salad, coleslaw with pineapple, greenbeans casserole (not traditional but sisters favorite), deviled eggs.
The trick is most of the stuff is served cold so no work or prep on Easter.
Already most of the stuff is made except for the eggs since we will color them tonight.

Us we have pasta with a fish based tomato sauce. Usually Baccala (Cod) or Shrimp. Then on the side we will have a fried fish platter. Salad, baked potatoes, fried mushrooms,
beets, rapini, and lots of bread. Then it's coffee and moms Italian cookies.

Growing up it was usually ham, or occasionally roast pork. As in pork when it still had great flavor.

This year I have no idea since dinner will be with friends, and they weren't talking. :)

At my house we will be having the usual ham w/pineapple gravy, mashed potatoes, sweet potatoes, green bean casserole, corn, salad and a couple different desserts.

At the in-laws we will have about the same but there is always going to be lasagna and stuffed shells.

Traditional-ham, sweet potatoes, mashed potatoes, bunch of sides and desserts. One year when I was young Grandma cooked a turkey, I remember Grandpa joking about it not being Thanksgiving, how did this turkey get here. Never happened again. I do remember at least one lamb dinner at Easter too.

This year we are visiting my son in Cinci, helping get ready to move next month. Eating out somewhere :(

i cooked a fresh ham all nite. now, it's marinating in mushroom gravy. old family recipe.

Not too fancy just good food!

Big fat ham, sweet potato casserole, lima beans, green beans, potato salad, broccoli salad, yeast rolls and plenty of deserts!

Sirloin tips with sautéed vidalia onions and shitake mushrooms, steamed asparagus and baby Yukon gold potatoes steamed. For dessert I'm thinking warm black walnut brownies with vanilla ice cream.

Leg of Lamb was really good and was easy to make. The potatoes roasted with the lamb in the fat were very good as well. It's a good thing I rode my bicycle 30 miles today. I do that at least once a week.
