OT: what's for dinner?

our aloha state member has been raving about kona longboard. so i had to try it out with tonight's dinner. it's was very much like wheat beer. slight haze. nice note of citrus. crisp and very enjoyable with seafood.

Rib steak done over charcoal, baked potatoes with butter and sour cream, salad and passion fruit mouse for desert .

Ribs on the grill, cornbread in the cast iron pan, green salad, baked beans out of a can kicked up with BBQ sauce and onions and much more.

thought about ny strip last night.. but my younger son said he needs better diet.. lol

Pete,  Plank Grilled Salmon.  Go to HD, get some untreated cedar fence boards, and have them cut to fit your BBQ.  Soak that cedar for a few hours, then oil one side of the wood and cook it on high for one minute.  Slap an oiled, seasoned salmon filet or steak on the oiled side, put the entire plank with salmon on that grill, and let that wet wood smoke and burn.  Doesn't take long to have the best salmon on the earth!

Have a water spritzer handy to put out any fires.

i grill my salmon with dry wood smoke. decided to use some orange juice, soy sauce, ginger and few other stuff. oh.. olive oil in the marinade and also on the grill. they don't stick all that bad. just few min on both side and they come out moist and nice. wish i was more closer to ocean. seafood selection here isn't all that good. salmon and mashed potatoes... and asparagus with prosciutto. tonight is left over :) 

Pete.  You can reconstitute grocery store fish.  While your plank is soaking, soak the fish in salty ice water.  Keep ice coming as it melts.  This removes all fishy smells and brings the fish back to fresh caught.  You don't need to live by the sea.  Just need a trick or two.  Works for any kind of fish and chicken.

Bumping since I got my first walleye of the year. Caught it in front of my parents cottage on a white twisty tail. Not much in the kitchen so I went with pecan and pretzel crusted walleye. Pretty good but could have used a little more salt. Anyone else get some good holiday meals?

Ribs sound good! I had something new this weekend. My father in law used charcoal to do the BBQ chicken but this was not normal charcoal, it was charred wood pieces that worked like charcoal. It was really good stuff! Would also love some brebas!

BBQ ribeyes with roasted veggies; corn on the cob, aspergus, red bell pepper, red onion, portabella shroom with feta and a BBQ baked fresh picked peach/blueberry dessert. Yum!

Spare ribs. I trimmed them St Louis style, rubbed them and smoked them with apple wood. I also made some Carolina slaw, baked beans and roasted potatoes.

dang james, those look awesome. used to try smoking in weber grill, but never really worked out great. i'm too great with temp control. will have to try again someday.
