Thanks everyone for all of your help. First year with this RDB

Now how do I know when they are fully ripe? They have to droop a lot?

When you're sure they're as ripe as they'll get, wait 1 more day :)
Different varieties have different characteristics, but if the neck skin is shriveling, you're probably good to go.
The longer you can wait, the jammier they will be.
The best way to know for sure is to watch these last few days of ripening, and applying that knowledge to the next ripeners.

Looks great Sal, thanks for the pics. They should droop a lot when ripe. Slow down the watering to allow the flavors to concentrate. On mine, when I place my hand below the fruit to almost cup it and lift it slightly and it separates from the tree that is how I tell it is dead ripe. I almost never have to pull the fruit from the tree. maybe a very slight twist at most but I've learned to be more patient. still not patient enough sometimes.

It should droop totally limp and be very soft.  It will continue to gain flavor up until the last day.  It also dries and some people like them drier than others.  Some figs will dry on the tree so you can wait as long as you want.  Some will mold on the tree so you want to pick them before that.  The wetter the fig and the wetter and hotter the environment the faster it will mold.

As Rui said, each fig you pick teaches you so you get closer to what you want on the next one.  And you should pick a few at different stages of ripeness to find out what you like best.  Here's what to watch for:

When you separate the fig from the plant the scar where the fig breaks off from should be dry or just slightly tacky.  If clear sap runs out you're early.  If milky sap runs out you're way too early.

When you cut open the fig you'll see the edge of the skin.  The middle part is called the pulp.  The part between them (if it's there) is called the "meat" (official but dumb name) or pith of the fruit.  If the pith is an opaque white that's too early.  As the fruit ripens that part turn translucent then thins out and disappears over time. 

I liked this old proverb: "How to select a ripe fig: If it has a hangman’s neck (droops at the stem), a mourner’s eye (honeydew oozing from the eye at the bottom of the fruit), and a penitent’s robe (skin tears and cracks), it’s ready."
I tasted my first RdB this week also. Mine doesn't drip honeydew but does droop on a red stem. I wait for it to shrivel and dry a little as well, unless the birds start pecking at it first.

My son just got home from school and looked at our figs trees and he found this on my brothers Celeste ... This one is drooping big time.

RDB is an excellent and productive variety. Congratulations.

I think all the comments here are right on. I usually pick this particular kind (RDB) when it droops a bit more.  According to picture 1, and 2, probably in about 2 more days. They will be ripe, but the flavor will be kind of "figgy". where as if you give it a few more days, and wait for it to really droop and wrinkle up (in about 3-5 more days) it will become very sweet and taste a bit more "Honey/berry" like.
Of course, this findings are just according to my planting conditions at home. Should not be very different from you, since we are like neighbors.

I have not been around this site much lately, but I am sure glad to see you around!  we gotta get together again soon!
