On Sunday I smoked up a pork loin and some of my Fig and Apple Brauts, for our family get to gather. we also had the usual fare . but I must say they devoured the pork loin .I think my Fig Sauce made the difference.
COOCKING METHOD
Indirect @ 220-250*F
INGREDIENTS:
For the meat:
4-6 LBs of pork loin
For the sauce:
Fig preserve [1 cup]
Maple syrup [2 tbsp]
Apple Cider vinegar [2 tbsp]
Dr. Pepper [2 tbsp]
One scallion
Butter [4TBS]
PREPARATION
SAUCE
Brown a scallion in butter in medium sauce pan over med-hi heat.
Mix the fig preserve with the maple syrup add to sauce pan , reduce to a simmer and cook for 10 min. remove from heat let cool for 5 min. then add the Apple Cider vinigar and Dr.Pepper. stir until mixed..
Smoke pork for 2.5 hours, Then mop sauce onto Pork loin. Continue smoke for 1 hour. Pull , Rest for 20 min. ENJOY!
