Pruning & Shaping New Fig Tree

I am new to fig propagation and I have a bunch of plants that are from cuttings I took this winter from what I now know is a Brown Turkey tree (thanks to help from this forum).

The trees are all single stem and are about 24"-30" tall and growing like weeds.  I would like to cut them just above a leaf node to encourage lateral branches.  What is the best time of year to do this and what is a suggested height to make the cut.  The plants are being grown on Long Island NY.

Welcome to the forum community.
I started a topic on simple pruning procedure.
I would let them grow for this season to gain caliper size (to support the scaffold branches), root mass, and prune or air layer the top next spring after dormancy.
