For the past few weeks in east Tenn, the weather has been warm, dry and great fig ripening conditions; however the last few days have been almost non-stop rain so my figs have been splitting, ripening and souring nearly simultaneously. They have been splitting with the eye facing up, and the skins have softened to mush with that winery odor. It is frustrating to see hundred of figs being enjoyed by the honey bees, wasps, hornets and birds.
I have managed to pick a big bowl of great figs during the same time,cut them into 4 pieces each and dehydrated them well in about 14 hours. I planned on eating them during the winter, but after eating one dried fig, I figure they will last about as long as a small bag of popcorn during a good movie.
