rippening fruits

I just started a figs crop few years ago and now we are trying to get the best way to get the perfect point for ripeness. all suggestions are welcome.

If you are more specific someone may be able to help. Figs must ripen on the tree, not much esle can be done about that.

Not all figs ripen the same way. Some of the indicators will depend on the variety you are talking about. A good place to start is with the work or Ira Condit in his text "Fig Varieties: A Monograph" found here http://www.scribd.com/doc/24859273/Fig-Varieties-A-Monograph . Good luck!

thanks for your comments. here is a pic of how they look in and outside. when i purchased they told me there was brown turkey and black mission included but im not too sure. The thing about the ripening is that the fruits seems to be not at the right point inside when they look ready to pick. all comments appreciated.

In general, as a fig ripens it will swell in size, change color, droop, and get soft. Different varieties will reach their peak flavor at different stages, so a lot depends on which varieties you have, and experimenting to find the stage of ripeness that tastes best to you. Both the varieties you mentioned are illustrated with photos on the Encanto Farms website in the "varieties" section; they will help you see how they should look both outside and inside when properly ripe.

I have a few small fig trees ripening fruit for the first time this year, so I'm trying to figure out the best stage for picking each variety. It will just take a little practice and a few mistakes. Good luck to you!
