Rum Chocolate Fig Cookies

Came across this recipe and its not bad. Changed it up a bit by spreading the filling over more of the dough and then rolling them into a log and cutting them up to form pinwheel cookies instead of bars for Christmas. Baked them on parchment paper.  Not a big fan of chocolate and think the recipe would work just as well without the chocolate.  Just don't see an Italian Great Grandmother or even a Grandmother baking with Chocolate Chips. A fig recipe that I made is similar to the Nabisco raisin biscuits  (no longer available).  On the internet as fry pan cookies.  raisins (figs) cut up small and sandwiched between 1/8" thick dough and rolled again then cooked in a frying pan with only light oil on griddle. every one loves them

I wouldn't make this recipe as stated, not even the first time.  Here's the ingredients

Cookie dough
  • 4 cups all purpose flour
  • ⅔ cup sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 8 oz cold butter
  • 4 large eggs
The filling
  • 12 oz dry figs
  • ½ cup pecans, chopped
  • ⅓ cup apricot jam
  • ¼ cup golden raisins
  • zest from one orange
  • 2 oz semisweet chocolate chips
  • ¼ cup good rum
  • ½ teaspoon cinnamon
Everyone's tastes vary but for me I'd put the finely ground nuts (almond, pecan or walnut) in with the dough.  I'd add vanilla or other high quality flavoring (Fiori di Sicilia would be great!) to the dough as well.

I'd alter the filling even more.  I'd either leave out the cinnamon or add nutmeg.  I'd use fig jam, preserves or spread instead of the apricot.  I'd use a small amount of rum extract or boil the rum down to 1 oz or less.  I'd leave out the raisins and either add more figs or start with 1 oz of honey, going up to 2 if needed for consistency or I'd add more fig preserves or all 3.  I would not chop the chocolate chips with the rest of the ingredients.  They would either be omitted or left whole.  If you chop them you won't even know they're there.  I would probably leave out the nuts from the filling.  That's just me, though  :)

Right on Rc  why adulterate fig cookies with anything unless you don't have real figs.  Actually I would leave the Rum in.    Also received one of those Christmas type catalogs.  Had 8 oz of Spanish figs $40 , filled with chocolate and liquor and dipped in chocolate. 

I'm all for the rum but I want to decrease the volume of liquid so the honey won't make it too soft.  Remember that 40% of the alcohol from the rum will stay in the cooked filling so don't feed a rum laced cookie to kids or pregnant women.
