This is just heart breaking

Here's a picture of all the figs I am not going to be able to eat this year I just pulled all these off today getting the trees ready to be put away for winter

Or just google "glyko syko" and pick one of the many recipes to make sweet un ripe figs. I hope it works for you bud,. Spoon sweets are a big hit in Greece.

Bass also has a recipe on his site for unripe figs. His fig preserve.

yeah, it happens. I have thousands left on the trees. In my zone, I have found some varieties that have been
reliable and rewarding like RdB, Melanzana, Florea, Hardy Chicago, Dark Portuguese, Osborne Prolific,
Latarrula, Longue d'Aout, O'rourke, Improved Celeste, Granthams Royal, Desert King, Salem Dark, Nebo,
Barbillone, Blava, Enrico, Ginoso etc, etc These varieties mentioned have given me abundance figs like no way
we can consume all the ripe figs. Hence if you want a reliable harvest, talked to fig growers in your locality &
grow the reliable ones. I have many late ripeners and they are aided by the greenhouse. By the way GH ripen
figs does not taste as good as non GH ripeners.

Which varieties gave you problems? I know I see a Panache in there.

Nubee here, if left on tree would they not ripen next spring?

Shame to lose so many nice figs.

Seeing all those figs struck a chip of my shoulder.

I love fruits. I have a huge backyard with grapes, peaches, blackberries, kiwi, pomegranates and figs. I enjoy picking fruit and freezing them for smoothies, making jam, and baking. when I see unripe fruits like yours that I heavily invested on, especially time.... I become disappointed.

I live in Idaho, Zone 6-7. We have a short season here. But for old time sake I decided to add a few more. This time I have learned to stick with what I know that does BEST for My CLIMATE only. Early to mid season varieties.

Frank, allot of these were very young trees that started out as 12" in the Spring and shot to 6 to 7 feet tall I wasn't expecting them to get figs this year but some of them did next year should be great

Chris I might give it a shot with a few of them but most of them are way too hard

I had no problem with the trees like I told Frank allot of these were very young trees that I didn't expect to get any figs at all  like Italian 258, Col de Dame Blanc, Black Greek, NJ Red, just to name a few next year should be great

I tried that a couple of years they didn't do anything for me in the Spring 

I think part of it was that we got a really early heavy frost Temps were down to 30's and then shot back up to 70's a few days later and has been that way for weeks if we didn't get that early frost I believe quite a few would of ripened

I think someone tried to pickle unripe figs before. No good.

But here's what you guys can do with all unripe figs that have to be pulled off before dormancy:

Collect them, slice them really thin and dry them in dehydrator, store them in a dry cold environment for later sue.
They make really good green tea for cold winter nights :)
Trust me on this one, you will thank me later.

Do unripe figs irritate the mouth?

I have alot of unripe figs going to waste too.especially I-258.just sad
