Time to taste the season dry figs.


Here some of the  popular varieties. Naturaly grown, ripen and dried under full sun these sweet,  flavored and very crunchy figs are processed following long time traditional methods.

Wow Francisco, they look super crunchy, look at those seeds, and I believe as you stated sweet and good tasting, just by looks alone a person would want to eat all of them in one setting.

Wow, that is awesome!  I guess they would be considered fully caprified.  I didn't even know a fig could have that many seeds!  (No wasps here in Delaware.)

Last night at our local Portuguese club's annual "thank you dinner" I was speaking to someone who had recently returned from the Azores and, naturally, I had to ask him about the figs here.  His favorite is Pingo de Mel.  His favorite drink is Aqua Ardente de Figo!  Do you find many figs "preserved" this way as well?  He said the alcohol content is quite high.  He also said there is a version made with fig leaves.

Unfortunately these figs are only available in the rural and farmers markets in small towns and villages...
In the bigger stores in town, they buy Turkish's only.

Yes they are home dried... the Côtio and Inchario are mine, Beb.Branca from my cousin.

Yes, your friend is correct. The small lesser quality dry figs are fermented and distilled to produce a very strong 'aguardente' locally known as 'bagaceira'  or 'bagaço' .

With this very alcoholic drink they prepare a fig liqueur adding a bunch of leaves of fig , grains of coriander, a stick of cinnamon and sugar... after seasoning this mix for a couple of weeks they add on water from the fountain  and after being filtered you have a nice, strong and fig flavored drink.

The distillation of figs is by now complete and the farmers are again busy cleaning their gear and alembics for the medronho (arbutus unedo) which is about ripe for pickup.

Those look great, nice photos!  How long does it usually take to dry figs in the sun?  I wouldn't mind giving it a try next year.  Home dried figs for filling some Italian Christmas cookies sound pretty good to me.
