I have a fig labeled as Black Brolo, bought it from someone off craigslist, I'm not sure exactly what type it actually is. My question is should I pinch the top growth to encourage a more bush type fig or is it too soon? The second fig was a branch that broke off an older tree and it rooted. It was growing straight up so I pinched it....hope I didn't mess it up. The third pic is another fig from the same guy and he had it named Sant Angelo. That one I'm trying to air layer with a bottle. Any advice on what I'm doing wrong or right?

Judging from my photos would you pinch now or wait till it leafs out more?

If you pinch you will get more side growth. Don't worry, figs are tough!
