It wants to grow into a big bush (like all Celestes) but I prune it into a tree form. It has never dropped figs (not yet). The longer I leave these figs on the tree to ripe (birds are problematic), the better they taste. Anywhere from five to fifteen figs swell and color each day and the tree has about 70+ green figs to ripen over the next several days. What else would you like to know?

Dead ripe and fresh from the fig protection program under the watchful eyes of detectives newspaper and clothes pin. They were 'released' just in time because another day and/or more rain would have spoiled them. Just right for a fig pizza.

alanmercieca, there is officially no fig named LSU Improved Cleleste as LSU has not released one by that name. But.... there are improved Celeste that originate in the LSU breeding program that got into the public's hands and should be known as improved Celeste. The one and only improved Celeste that LSU released is the O'Rourke named after the breeder Dr. Ed O'Rourke who headed the research at LSU back in the 50's and 60's. The taste of the O'Rourke is different than any Celeste I've ever eaten, it is very good and holds up to the rain.

It must be just awful having to eat all those figs.  How do you do it day after day.
