Varietal fig preserves (jam)

I have mostly made fig preserves with Hardy Chicago/Celeste prior to this year. With an over abundance of Violette de Bordeaux, I made a few jars of Hardy Chicago/VdB preserves and noticed the preserves are more distinctly red with a different flavor than usual.

Does anyone have a favorite mix of varieties for fig preserves (jam).

I don't like figs unless they are fresh.

Looks good! Don't make any jams myself but maybe if I had too many figs I would...

That looks spectacular.  I hope I get enough figs all at once to do that many times over.

Great looking jam, I will have to try some red, I made several jars from Mission, Turkey and Kadota that turned out to be some of the best jams compared with other fruit jams. Yum Yum!

I made some this past year with a combination of MBVS and Gino's Black figs.
Turned out GREAT and had a reddish hue when done.

Here you go. Figs, sugar, balsamic, and lemon juice. I was intentionally trying to find a non pectin recipe. The actual recipe is at the link although I find I need to simmer it around an hour or more to get the consistency I want. I start with the recipe suggested amount of balsamic and then add more as I taste. I cut the figs into 8 or 10 pieces but the atreano figs are huge. http://traceysculinaryadventures.com/2012/10/fig-balsamic-jam.html

The vinegar and sugar make the jam taste like the best strawberry jam ever. Next time add some salt and use a hand blender to chop up the figs more. Trust me....you will be glad you did!

Snaglpus- will def try that next time. I always plan to blend it but get lazy.
