On the first fig, he did mention that the taste was sour. It may have been not quite ripe.
I also notice that many figs they have picked had milk at the stem. When I pick, I wait for the neck (if present) to droop and the skin to sag, and there is never milk at the stem. If I pick too early, there is always milk at the stem, and the fruit is not always sweet, sometimes sour, even though the inside may have lots of color.
