What are best tasting white figs?

And do they grow well in zone 8?

"White" fig is a very generic and possibly exceedingly broad category. Many figs could be classified as "white" because their skin stays relatively green when ripe, but are not actually called or named "white".

Desert King, Danny's Delite, etc could be classified as "white", but I don't think they are thought of in that way.

As for hardiness, if you have frost or freeze, you need to consider protecting your trees in some manner. At that point you can grow a wide variety of figs, white or otherwise.

What I refer as white or Bianca/bianco is as jon says light color figs, yellow to very light green to green, in that case you may want a Paradiso which is delicious in my opinion, the Paradiso variety I have is greenish which gets a rusty or rosy color dusted throughout the fruit, not completely mind you, when more mature. Yummy.  Dottato is also very good. I will look forward to Atreano as well. Adriatico ect.  Ciao
