When to wrap tree for winter?

I live in zone 7 in Maryland and was wondering when I should start to wrap up my tree outdoors for the winter? Suggestions? Thank you as I am new to figs. I have a brown turkey and a celeste. Both are about 2 years old.

I'd be interested in thoughts on as well as techniques.

I was going to wrap shortly after leaf drop, and was going wrap in burlap and 6 inches of mulch around root ball

On my trees the leaves still have not dropped yet. And the temps are going into the 30's this week

Wait till the tree goes dormant - let the leaves drop, usually after the first frost, sometimes takes a while.  Frost won't kill the tree.

Well, depends on your weather.
If you've got brutal weather protect the tree before the first -10°C / 14°F  - but it'll be a pain, as you need to remove yourself all remaining leaves and fruits.
If your weather is not brutal, wait for leaves to fall and for the stems to dry a bit in an effort to prevent mold (remove all remaining fruits and leaves as those might turn into a mold propagation area ).
Here I have two big dips (normally) one in December and one in February. So my target is installing the protections before 1st of December.
Before, I used to install them before the 1st of November ... I'm still monitoring the weather ... Just in case ...
