Whooaaaa!

Got these over the past few days from three different tx everbearing trees in my neigborhood. That is literally about 35 lbs of figs. Coworkers are gonna like me on monday. Making jam with the rest. Let freedom ring!!!

 I havnt had enough figs in the last 30 years to make this recipe, but if you want to try it, I can tell you people went crazy for them.

  Mrs  Vernali’s  preserved figs

7 lbs good ripe, whole figs

4 lbs sugar  ***can use half  brown sugar

 --------------------

(Spice Bag)

2tsp ginger root

½ tsp mace

1 tsp whole cloves

1 tsp Allspice

1 tsp cinnamon

*Whole cloves

*whole coriander

Bring vinegar, sugar and spice bag to boil – 5 mins.

Pour into porcelain or glass bowl

Leave one day

Every day pour off liquid from the figs and boil it then pour back over figs.  

Do this every day for 4 days.

On 5th day boil figs in the liquid

 Pack into hot jars and process BWB 15 mins 

 

I know who I'm hanging out when I go back home. 

HOLY COW

Now that's is a MOTHER LOAD of figs. Celeste?

Lots of figs and your surely getting more i presume before season ends, if mine i would dry a bunch for winter treat but here its not always possible from season to season.
Fig bread also good if one does not mind an increase in waistline.

How much vinegar? Mixed with water?

You're all correct, fig growers are an amazing bunch of people.  Justin didn't know me from anybody, but he invited me over to his home, shared some of his bounty, showed me his figlets/trees and sent me home with a jar of his jam.

It has been over 15 years since I tasted a fresh fig and Justin re-introduced me to the remarkable experience again today.  I don't care what kind it was cause it was a taste of heaven.  Thanks Justin!

So here's my take......sweet fig, not many seeds, not figgy tasting, most were quarter size or smaller (Pete would love these since they are bite size).  I'm having trouble describing the taste, something like a cross between melon, berry and Concord grape.
